Sour potato soup with wild mushrooms and bacon

  • 4 pcs potatoes
  • 1 handful of dried mushrooms
  • 200 ml milk
  • 200 ml delicatessen cream
  • 2 tbsp plain flour
  • sugar to taste
  • vinegar to taste
  • 100 g Orava bacon
  • salt, ground black pepper, allspice, bay leaf

1. Soak the mushrooms in a bowl for about an hour.

2. Cook the cleaned and diced potatoes over a medium heat. Season with salt and pepper.

3. Squeeze the water out of the soaked mushrooms, add them to the soup and cook until the potatoes are soft.

4. Make a roux with the milk, cream and flour, pour it into the soup and bring to the boil.

5. Remove from the heat and finally season with sugar and vinegar if necessary.

6. Serve with white bread and diced fried bacon.
