Step by step we present you a great recipe for a delicious apple pie with mascarpone. Perfect to accompany a cup of hot tea, cocoa or coffee. Not only children will love it, but also hungry adults. Delicious apple pie with mascarpone:
What we will need:
- 200 g semolina sugar
- 4 eggs
- 250 g mascarpone
- 200 g semi-coarse flour
- 16 g baking powder or soda
- 4 large apples, peeled
- 1 teaspoon of Kotanya’s apple strudel spice or 1/2 teaspoon of cinnamon or cardamom
- icing sugar for decoration/sprinkling
How we will proceed:
1. Line the cake tin (size 24 cm in diameter) with baking paper by soaking the paper in cold water, crumple it in your hand, spread it out and the tin will lay out beautifully.
2. Preheat the oven to 180° C with a rack in the middle. Peel all the apples, cut them into quarters and cut out the cores. Then, using a sharp knife, slice just 2 apples into 2-3mm thin crescents (a long lengthwise cut will then form “petals” on the surface of the dough) – I only had small apples, so the final effect is not so pretty. Cut the other 2 apples into smaller cubes – these will come inside the dough.
3. In a bowl, whisk the whole eggs with the sugar, then add the mascarpone and just whisk lightly. Gradually add the flour mixed with the baking powder and the apple strudel spice or just the cinnamon. At the very end, gently stir in the diced apples.
4. Pour the batter into the tin and top with the sliced apples.
5. The top of the pastry can be drizzled with honey or sprinkled with a little cane sugar (for a caramel effect).
6. Place in an oven preheated to 180° C and bake for 45-50 minutes, testing with a skewer to see if it is cooked. After baking, you can sprinkle with vanilla icing sugar. This is a delicious and very moist cake.
