The secret lies in blending the liqueur directly into the hot pudding and using high-fat cream.

What you’ll need for a large baking tray:

For the fluffy cocoa sponge:

  • Eggs: 5 pcs (separate yolks and whites)
  • Granulated sugar: 3 tablespoons
  • Semi-coarse flour: 5 tablespoons
  • Quality cocoa powder: 2 tablespoons
  • Vegetable oil: 2 tablespoons
  • Hot water: 2 tablespoons
  • Baking powder: 1/2 packet

For the delicious egg liqueur cream:

  • Whole milk: 750 ml (divided into 600 ml and 150 ml)
  • Vanilla pudding powder: 3 packets
  • Egg liqueur: 200 ml
  • Butter: 250 g (must be at room temperature)
  • Powdered sugar: 3 tablespoons

For the rich Parisian whipped cream:

  • Whipping cream (ideally 40% fat): 2 tubs
  • Sugar: 1 tablespoon
  • Cocoa powder: 2 tablespoons

For the final decoration:

  • Grated chocolate: to sprinkle on top
  • Egg liqueur: to lightly drizzle over each slice just before serving

Step-by-step preparation:

1. Baking the cocoa sponge: In a clean bowl, beat the egg whites until almost stiff, add the granulated sugar, and continue beating until you get a firm, glossy meringue. Gradually whisk in the yolks one by one, then the oil and hot water. Finally, gently fold in the semi-coarse flour mixed with baking powder and cocoa using a spatula. Spread this evenly over the cooled cocoa sponge.

3. Quick Parisian whipped cream: Pour well-chilled whipping cream (preferably 40% fat) into a bowl, add cocoa powder and a tablespoon of sugar. Whip together until you get a firm chocolate cream. Thanks to the high fat content, it comes together quickly and holds its shape beautifully.

4. Layering and final touch: Spread the Parisian whipped cream over the yellow liqueur cream and gently smooth it out. Generously sprinkle the top with grated chocolate. Chill the dessert thoroughly in the fridge until set. Final tip: Just before serving, you can lightly drizzle each slice with a bit of egg liqueur for an extra kick.
