What you’ll need for a large bundt pan:

For the honest batter:

  • Soft curd: 250 g (ideally in a block, gives the cake the right moistness)
  • Hera (or butter): 250 g (softened at room temperature)
  • Eggs: 4 pcs (either whole or yolks and whites whipped separately for extra fluffiness)
  • Semi-coarse flour: 300 g
  • Powdered sugar: 300 g
  • Vanilla sugar: 1 packet
  • Baking powder: 1 packet
  • Lemon zest: from an organic lemon (for a fresh aroma)
  • For greasing and dusting the pan: a bit of fat (butter or Hera) and coarse flour or breadcrumbs

Step-by-step preparation:

1. Whipping the base into a foam: In a deep bowl, thoroughly whip the softened Hera with powdered and vanilla sugar into a rich, light, and fluffy foam.

2. Adding eggs, curd, and lemon: Gradually beat in the eggs, one at a time, into the whipped foam. Then mix in freshly grated lemon zest and add the soft curd by spoonfuls. Briefly mix everything into a smooth cream.

3. Incorporating flour and baking powder: Mix the semi-coarse flour with the baking powder and gently fold it into the curd base until you get a moist, semi-thick batter (if it’s too stiff, you can carefully add a tablespoon of milk).

4. Pouring into the pan and baking: Carefully grease the bundt pan with fat and dust with coarse flour (or breadcrumbs). Evenly spread the batter into the pan.
