Preparation isn’t difficult, but you need to give the dough enough time. The first rise takes one hour, and the shaped crescents then rise for another 20 minutes. That’s what gives them their soft texture. You can adjust the amount of poppy seed filling to your liking.

What You’ll Need

For the yeast dough:

  • 500 g semi-coarse flour,
  • 1 cube of fresh yeast,
  • 2 egg yolks,
  • 1/2 teaspoon salt,
  • 100 g butter,
  • 3 tablespoons granulated sugar,
  • 250 ml milk.

For the filling and finishing:

  • poppy seed filling to taste,
  • 1 whole egg for brushing,
  • a little water for the egg,
  • powdered sugar for dusting.

Step-by-Step Preparation:

1. Preparing the dough: Sift the semi-coarse flour into a bowl and add the fresh yeast, egg yolks, salt, butter, granulated sugar, and warm milk. Work everything together thoroughly until you have a smooth, non-sticky dough.

2. First rise: Cover the kneaded dough with a clean tea towel and let it rise in a warm place for about 1 hour. Properly risen dough should double in size during this time.

3. Dividing the dough: Divide the risen dough into 5 roughly equal parts. Roll each piece out into a round disc, which you’ll use to form the crescents.

4. Cutting and filling: Cut each rolled-out disc into 8 triangles using a pastry wheel or knife. Place a little poppy seed filling on the wider end of each triangle, according to your taste.

The second rise of the shaped crescents is also important. After 20 minutes, brush them with the egg and water mixture, and only then place them in the preheated oven.

How to Shape Even Crescents

By dividing the dough into 5 parts and each round disc into 8 triangles, you’ll get even portions. Place the filling on the wider end and roll the dough towards the tip. Thanks to this method, the crescents will be similar in size and bake evenly.
