Finely grated carrots add an extraordinary delicacy to a seemingly ordinary cake that few can match. Take inspiration from our recipe for juicy carrot cake with chocolate!
Carrot cake with chocolate
What we will need:
- 4 eggs
- 150 g crystal sugar
- 180 ml oil
- 2 tbsp grated orange peel
- 350 g grated carrots
- 250 g plain flour
- 1,5 KL baking powder
- 1 KL baking soda
- 1 pinch salt
Frosting:
- 200 g chocolate
- 100 ml whipping cream
How we will proceed:
1. Grate the carrots on the finest grater.
2. In a large bowl, whisk the whole eggs and sugar.
3. Then add the oil, orange zest and grated carrots.
4. In another bowl, mix together the flour, baking powder, baking soda and salt.
5. Stir the dry ingredients lightly into the carrot mixture and layer the dough into a taller tin (40 x 35 cm) lined with baking paper.
6. Bake in a preheated oven at 170 °C for approximately 40 minutes.
7. Let the baked cake cool in the tin and then cut it into squares with a sharp knife (still in the tin).
8. Melt the chopped chocolate in the heated cream for the icing.
9. Spread the icing over the surface of the cake and let it set a little.
10. Allow to set for a further 15 minutes and serve.
