What we will need:

  • 800 g chicken breasts
  • Paprika, salt, pepper
  • Onions
  • 150 g bacon
  • 1 paprika
  • 4 tbsp olive oil

How we will proceed:

1) Cut the meat into cubes, transfer to a bowl, season with salt, pepper and paprika, add olive oil and mix well. Cover the bowl with cling film and let the meat marinate.

2) In the meantime, cut the peppers into cubes. Also clean and slice the onion. Dice the bacon as well. Grease the pan with oil.

3) Alternatively, place the meat, onions, peppers and bacon on skewers. Place in a baking dish and place in a preheated oven at 190 degrees for 35 minutes.

What we will need:

24 x 24 cm tray

Batter:

  • 5 eggs
  • 0,5 cup icing sugar
  • 2/3 cup wheat flour
  • 1/3 cup cocoa
  • 1 teaspoon baking powder

Cream:

  • 2×250 g mascarpone cheese
  • 0.5 cup sugar (or less if you like)
  • 2 small packages of oreo cookies (8pcs)
  • 50 g white chocolate
  • 1 small jar of sour jam (in my case gooseberry jam)
  • OPTIONAL: water with lemon for soaking (ratios at your discretion, I do 1:1)

How we will proceed:

1. Prepare the sponge: whip the egg whites into stiff snow.

2. Gradually add the icing sugar and stir until completely dissolved.

3. Add the egg yolk one at a time and mix briefly – until the ingredients are combined.

4. Add the sifted flour mixed with the cocoa and baking powder. Mix everything with a spoon.

5. Pour the batter onto a baking tray lined with baking paper and place in a preheated oven at 180 degrees for about 20 minutes (bake until dry).

6. Prepare the cream: mix the mascarpone with the icing sugar.

7. Divide the cream into 2 parts. Add the crumbled oreo cookies to one.

8. For the other part of the cream, grate the white chocolate and mix.

9. Cool the sponge cake, cross cut into two peaks. Place one of them on a plate. Secure the sides of the tin with rimmed foil. Optionally, you can soak the sponge in water with lemon and then brush the cream with white chocolate.

10. Cover the cream with the other biscuit, press lightly and spread a thin layer of jam.

11. Place the biscuit cream on top and smooth out. Put the dough in the fridge – at least 2-3 hours to chill nicely and cut well.

For the cream:

  • 500 g mascarpone cheese
  • 250 ml 30% cream
  • 150 g grated coconut
  • 2-3 tablespoons sugar
  • 100 g white chocolate
  • 50 g butter
  • 2 glasses of cherry / blackcurrant jam (or as desired)
  • 1 packet of elongated biscuits

How we will proceed:

1. Start by mixing the egg whites, gradually adding the sugar and beating until stiff peaks form.

2. Add 1 egg yolk at a time, mixing briefly after each addition just to combine the ingredients.

3. Gently fold in the sifted flour, cocoa, and baking powder using a spoon or spatula.

4. Pour the batter into a baking tray lined with baking paper, smooth it out, and bake in an oven preheated to 180 degrees C for about 20 minutes, or until a skewer inserted into the center comes out clean.

5. In a saucepan, melt the butter with 100ml of cream over low heat until completely melted.

6. Turn off the heat, add the coconut flakes, and mix thoroughly. Allow the mixture to cool.

7. Whip the remaining cream with sugar until it is almost stiff.

  • 2 pcs bay leaves
  • 8 pcs larger tomatoes
  • 1/2 litre water
  • 1 tsp sugar
  • 1 tsp vinegar
  • 1 tsp dried oregano (or a handful of fresh)
  • salt, ground black pepper, dried garlic to taste

For the Cheese Sandwich:

  • 3 tbsp butter
  • 4 slices of toasted bread
  • 50 g cheddar (or other hard cheese)

How we will proceed:

1. In a saucepan, melt the butter and add the bay leaves. Fry briefly, then add the diced tomatoes (with skin). If you don’t like the skins, peel the tomatoes easily by dipping them in boiling water for a few minutes and slicing them crosswise on the surface. Then simply pull off the skin with your fingers or a small knife.

2. Season the tomatoes with salt and pepper and cook for about 5 minutes until they release their juices. Then add water, cover the pot, and cook for about 15 minutes.

3. Remove the bay leaves from the soup and blend the cooked tomatoes with an immersion blender. Add the sugar, vinegar, and oregano and cook everything together for about 2 minutes. Taste and adjust seasoning if necessary.

4. Set the soup aside while you prepare the sandwiches.

5. Heat two tablespoons of butter in a pan. Once the butter has melted, reduce the heat to medium and place two slices of bread in the pan. Add the cheese slices to cover the entire surface of the bread and top them with the remaining bread slices.

6. Toast for about 3 minutes, add the remaining butter, flip the sandwich, and toast the other side for the same amount of time.

7. Serve the soup in bowls and garnish with the cheese sandwich cut into small cubes.

  • 1 kg cleaned peppers
  • 1 kg cleaned white pepper
  • 3 pcs chilli peppers
  • 4 tbsp oil
  • 1 pcs onion
  • 4 tbsp tomato paste

  • 5 pcs garlic
  • vinegar, crystal sugar to taste

How we will proceed:

1. First, remove the tops and stems of the peppers, discard the seeds, and weigh one kilogram of each type of pepper. Chop them into smaller pieces.

2. Similarly, clean the chillies, preferably wearing silicone gloves for safety.

3. Next, heat the oil in a large pot, add the chopped onions, and sauté them until they become soft.

4. Then, add the purée and bring it to a boil.

5. Add the peppers and chillies to the purée, season with salt, pour in about 100 ml of water, and simmer over low heat until the peppers are tender.

6. Use a stick blender to blend the softened peppers right in the pot, then return the pot to the heat.

7. Continue cooking until the spread reduces in volume and reaches a thicker consistency.

8. At the end, adjust the seasoning with salt and sugar to your taste, and let it simmer for an additional minute.

9. Ladle the hot spread into small jars, seal them, turn them upside down for 15 minutes, and leave them under a blanket overnight. And it’s done!”

Homemade wreaths with cream:

What we will need:

Dough:

  • 250 ml water
  • pinch of salt
  • 100 g butter
  • 200 g plain flour
  • 6 small eggs

cream:

  • 500 ml milk
  • 5 egg yolks
  • 100 g semolina sugar
  • 2 sachets of vanilla pudding
  • 1 teaspoon vanilla essence
  • 100 g butter

This quantity will give us about 35-40 wreaths.

How we will proceed:

1) Start by pouring some milk into a mug. Stir in the custard powder and whisk in the egg yolks. Bring the rest of the milk to  boil over a low heat. Pour some milk into the mug with the custard and egg yolks. Stir thoroughly. Then pour it back into the pot and let it boil for a while, stirring constantly. Once thickened, set aside and stir in the sugar and butter. Cover with cling film. Place this directly on top of the pudding, at least it will not cause the water to curdle. Chill in the fridge (ideally overnight).

2) Put the water in a saucepan and bring to the boil. Add the salt butter. Bring to a boil again. Add the sifted flour and reduce the heat. Keep stirring until the dough is smooth and not sticky. Stir for 2-3 minutes until a white coating starts to form on the bottom.

3) Transfer the dough to a bowl and slowly stir it. Gradually stir the eggs into the lukewarm mixture, one at a time. Incorporate each egg well.

4) Transfer the dough to a piping bag and start shaping the individual wreaths on a baking sheet lined with baking paper.

5) Bake at 200 degrees for approximately 20-30 minutes. Do not open the oven at the beginning of baking! If you have chosen a larger size of wreaths, after 20 minutes reduce the temperature to 160 degrees and let it finish baking for 10 minutes.

6) After baking and cooling, just fold the wreaths as we know them.

  • 500 ml milk
  • 2 tablespoons starch
  • 4 tablespoons coconut
  • 250 g biscuits
  • 100 g butter

For the top:

  • 50 g white chocolate + 1 tbsp butter
  • coconut

How we will proceed:

1) Start by pouring 350 ml of milk into a saucepan. Gradually add the sugar, starch and coconut. Bring to the boiling point and immediately remove from the heat.

2) While the cream is still warm, add the butter and the rest (150 ml) of the milk. Stir and allow to cool.

3) Next, prepare the mould. Place the biscuits on the bottom and spread a layer of cream on top, then the biscuits and cream again. Continue like this until you run out of ingredients.

4) Finally, drizzle with melted chocolate and sprinkle with coconut. Then place in the fridge for a few hours.

What we will need:

  • 3 chicken breasts (without skin)
  • 120 g spreadable butter
  • 1 tbsp mayonnaise
  • 1/2 tbsp salt
  • 2 pcs garlic
  • 100 g fresh spinach
  • 80 g hard cheese
  • a little oil to taste
  • salt, ground black pepper, ground paprika

How we will proceed:

1. Preheat the oven to 220 °C.

2. In a bowl, mix the spreadable butter, mayonnaise, salt, and crushed garlic.

3. Add the finely chopped spinach and grated hard cheese to the mixture and combine everything thoroughly.

4. Place the chicken breasts on a cutting board. Carefully slice each breast roughly in half horizontally, without cutting all the way through, to create a pocket for the stuffing.

5. Divide the stuffing evenly among the chicken pockets, then close them with toothpicks.

6. Heat oil in an ovenproof frying pan over medium heat. Fry the chicken pockets until they are golden brown on both sides, approximately 4 minutes per side.

7. Transfer the frying pan to the preheated oven. Bake the chicken at 220 °C for about 10 to 15 minutes, depending on the thickness of the chicken breasts.

What we will need:

Corpus:

  • 120 g butter
  • 125 g icing sugar
  • 1 packet vanillin sugar
  • 3 eggs
  • 250 g plain flour
  • 1/2 packet baking powder

pear filling:

  • 5 pcs pear
  • 1 pk ginger (approx. 1 cm)
  • 5 tbsp granulated sugar
  • ground cinnamon to taste

foam cream:

  • 300 g white chocolate
  • 6 pcs gelatine
  • 600 ml whipping cream
  • 3 eggs
  • 3 pcs egg yolk
  • zest of 1 lime

salted caramel:

  • 70 g granulated sugar
  • 30 g butter
  • 180 ml milk
  • 1 tsp vanillin sugar
  • salt to taste

for decorating:

  • 100 g pistachios

How we will proceed:

  • Corpus: Beat the butter with the icing sugar and vanillin sugar until smooth. Gradually beat in the egg yolks. Mix the flour with the baking powder and stir into the butter foam. Finally, stir in the stiff snow. Pour the batter into a greased and floured baking tin. Place in an oven preheated to 170 °C and bake for 30 to 40 minutes. Let cool after baking.
  • Pear filling: Peel and dice the pears. Peel and grate the ginger. Place the pears and ginger in a saucepan, add the sugar and ground cinnamon and cover with water. Make a thicker compote.
  • Foam cream: chop the chocolate coarsely and melt in a hot water bath. Remove from heat. Soak the gelatine in cold water. Whip the cream and store in the refrigerator.
  • Beat the eggs and egg yolks in a hot water bath until foamy. Remove from the heat. Mix with the liquid chocolate and the gelatine stripped of excess water. Stir until the gelatine is dissolved. Add the grated lime zest, place in a cold bath and stir until the mixture cools. Shortly before the mixture begins to gelatinize, aerate it with whipped cream.
  • Salted Caramel: Melt the butter in a pan, add the icing sugar, vanilla sugar and salt and allow to melt. Slowly add the milk and cook, stirring constantly, for about 30 minutes until creamy. Add salt to taste and set aside.
  • Place the cooled cake in the tin and brush it with the pear filling and the resulting syrup. Brush the cake with the mousse and refrigerate for at least 4 hours.
  • Before serving, decoratively brush the cake with salted caramel and sprinkle with roasted and chopped pistachios.
