This raspberry cheesecake will grace your holiday table or it can be a birthday cake for a loved one. It always looks great, tastes great too and most importantly it is flour and sugar free! It will take you approximately 10 minutes to prepare as it is a very simple cake and you will eat it almost as quickly as you prepare it.

Unbaked raspberry cheesecake without flour and sugar

What we will need:

  • 1 packet – gluten free biscuits
  • 30 g – butter
  • 1 tablespoon – coconut oil
  • 250 g – mascarpone
  • 250 g – soft cottage cheese
  • honey or other sweetener to taste
  • 250 g – raspberries
  • 1/2 packet – gelatine powder

How we will proceed:

  • Blend the biscuits with a stick blender to a powder, add melted butter and melted coconut oil.
  • Prepare a round baking tin. For these ingredients, a 15 cm baking tin is the ideal size, line the bottom with baking paper and pile the biscuit mixture on top. Smooth with a spoon and layer the mascarpone and cottage cheese (sweeten with sweetener, but feel free to use honey or sugar to taste). Use good quality mascarpone that is firm, not imitation mascarpone that keeps moving around in the cup. Good quality mascarpone is thick and harder to remove from the jar with a spoon.
  • Layer the raspberry mixture on top of the mascarpone – puree the raspberries with a stick blender, add half of the gelatin and gently heat the puree in the microwave. Pour in the mascarpone mixture and place in the fridge to set.

What we will need:

Dough:

  • 250 g low-fat cottage cheese
  • 1 egg
  • 125 ml oil
  • 100 g sugar
  • pinch of salt
  • 400 g semi-coarse flour

  • 750 g sour cherries
  • 50 g almond flakes

for the gingham:

  • 100 g butter
  • 100 g sugar
  • 1 vanilla sugar
  • 200 g plain flour
  • half a teaspoon of baking powder
  • 1 egg yolk

How we will proceed:

1) Start by putting the curd in a sieve lined with a clean tea towel. Let it drain and squeeze out the liquid thoroughly. Then place it in a bowl with the egg, oil, sugar and salt and mix thoroughly.

2) Mix the semi-coarse flour with the baking powder and gradually knead. Then form the cheesecake dough into a ball, which you wrap in clingfilm and place in the fridge for 30 minutes.

3) Preheat the oven to 200 degrees. Wash and de-stem the cherries and pit them. Butter, sugar, van. Sugar, plain flour, baking powder and egg yolk knead quickly to a paste.

4) Place the dough on a greased baking sheet and roll it out. Top evenly with the cherries, the granola and also the almond flakes.

What we will need:

  • 2 tbsp olive oil
  • 70 g bacon
  • 1 large onion
  • 3 pcs medium potatoes
  • 6 pcs eggs
  • 50 g parmesan
  • salt, ground black pepper, ground sweet paprika to taste

How we will proceed:

  • Heat the oil in a cast iron pan.
  • Add the chopped bacon and fry it.
  • Then add the onion, cut into thin strips and fry until golden brown.
  • Finally, add the potatoes cut into thin slices or small cubes and fry everything together over a medium flame for about 10 minutes.

What we will need:

  • 1 banana
  • kiwi – 2 pcs
  • strawberries – 8 pcs
  • apple – 1 piece
  • butter biscuits – 8 pcs
  • whole milk – 1 l
  • caramel pudding – 2 packets
  • caramel topping
  • slices of almonds or lentils
  • icing sugar

How we will proceed:

1. Peel the apple and remove the core. Then cut it into smaller cubes and place in a bowl. Do the same with the kiwi and banana. Cut this fruit into cubes as well. Finally, remove the strawberries, wash them and cut them into small pieces.

2. At the next stage, pour off about 200 millilitres of milk and stir in the caramel custard powder. Bring the remaining quantity (800 ml) to the boil in a small saucepan. When the milk starts to boil, pour in the melted custard and cook, stirring constantly, until it thickens.

3. If necessary, season with icing sugar and finally remove from the heat.

4. Take a bundt tin, grease it with butter and drop in the cut pieces of fruit.

5. Place the broken butter biscuits on top. Pour the caramel cream over the ingredients and let the dessert cool to room temperature. Then place it in the refrigerator, preferably overnight, to set.

6. Turn out onto a cake tin and decorate with caramel topping, almonds or ribbons as desired.

  • 1 cup mineral water
  • 1 cup milk
  • 3 tablespoons oil
  • 3 eggs
  • salt
  • breadcrumbs

stuffing:

  • 30 dkg sauerkraut
  • 10 dkg yellow cheese
  • 1/2 kg mushrooms
  • 1 onion
  • 2 tbsp butter
  • salt, pepper, garlic to taste

for wrapping:

  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup flour
  • salt, pepper
  • breadcrumbs
  • fat for frying

How we will proceed:

  • Put flour, milk, water, egg, oil and salt in a bowl. Mix everything together and let the dough rest for 30 minutes.
  • Fry the pancakes in a dry frying pan.
  • Chop the mushrooms and onion, fry in butter and add the chopped cabbage.
  • Add 1/2 cup water and cook covered for 30 minutes.

7. Pour the batter into a buttered and breadcrumb lined tin and then place in an oven preheated to 180 degrees C for about 55 minutes.

  • 500 g meat, 2 garlic cloves
  • 1 tablespoon potato flour, seasoning for minced meat
  • 3-4 potatoes, 2 tomatoes, 2 onions
  • 10 slices of salami, salt, herbs from Provence
  • Handful of grated cheese, sunflower oil

Ingredients for the sauce:

  • 200 g Greek yoghurt (or sour cream)
  • 2 tablespoons mayonnaise, 2 garlic cloves
  • Salt, pepper, herbs of Provence

How we will proceed:

1) Peel the potatoes, cut into cubes and squeeze out the juice. Add the garlic to the bowl with the minced meat. Then add the potato flour and seasoning for the mince.

2) Mix well. Take a piece of the mince mixture in your hands and form small flat meatballs.

3) Peel the potatoes and onions. Slice the onions, potatoes and tomatoes.

4) Grease a heatproof frying pan with sunflower oil. Alternate between potato slices, mince, potato slices again, onion, tomatoes and salami.

5) Sprinkle Provençal salt and herbs on top. Place the baking sheet in a preheated oven at 190 degrees for about 50 minutes.

6) Meanwhile, prepare the sauce. Mix the yoghurt with the mayonnaise and the cleaned and crushed garlic. Season the sauce to taste with salt, pepper and herbs.

Here’s a recipe and instructions for making the tastiest homemade horseradish sauce you’ve ever had.

Horseradish sauce

What we will need:

  • fresh or canned horseradish
  • cream
  • butter
  • flour
  • beef stock or water
  • salt
  • sugar
  • lemon juice

How we will proceed:

  • In two tablespoons of butter or vegetable butter, fry three tablespoons of plain flour. If you don’t have plain flour, semi-coarse flour can also be used. Some people even prefer the sauce to have a slight ‘texture’ that semi-coarse flour gives it. Prepare a golden, fragrant roux.
  • Pour in the beef stock (half to three-quarters of a litre). Since some families like horseradish sauce with their boiled prime beef, there should be no shortage of beef stock when making horseradish sauce. If you don’t cook beef and don’t have broth, pour water over the roux.
  • Boil the resulting sauce thoroughly (about ten minutes). There should be no lumps of roux in it. Then pour in a cup of sweet cream (so-called whipping cream), bring to the boil and adjust the thickness: when the sauce is thin, thicken it with a spoonful of flour whisked in a little water or milk. If the sauce is too thick, dilute it a little (with stock, water or milk). Add three heaped tablespoons of grated fresh or preserved horseradish and bring to the boil.
  • Remove from the heat and season with salt, sugar, lemon juice or vinegar (add a teaspoon at a time). Adjust to a pleasant slightly sweet and sour taste. Seasoning is done off the stove because adding sugar to the sauce can cause irreversible burning. Serve the horseradish sauce with cooked beef, with cooked smoked meat or with a piece of cooked good ham. Those who do not like meat will enjoy horseradish sauce with a boiled egg.

Dough:

  • 8 egg whites
  • 200 g sugar
  • 100 g ground poppy seeds
  • grated coconut to taste
  • 6 tablespoons semi-coarse flour

Cream:

  • 8 egg yolks
  • 200 g sugar
  • 3 dl milk
  • 1 tbsp starch
  • 2 tablespoons custard powder
  • 50 g butter

On top:

  • half a cup of coffee
  • 150 g crushed biscuits
  • 180 g dark chocolate
  • 2 tablespoons milk

How we will proceed:

1) Start by beating the egg whites with the sugar until stiff. Then add the flour, poppy seeds and coconut. Mix thoroughly and make a nice smooth batter.

2) Now prepare a baking tray, which you will line with baking paper. Spread the batter evenly on the baking sheet. Bake at 180 degrees for about 25 minutes.

3) Continue with the cream. Whisk the egg yolks with the sugar. In another bowl, dissolve the starch in the milk and add to the egg yolk mixture. Start heating this mixture over a low heat. After a while, add the custard powder. Keep stirring until the cream thickens and then set aside. Add the butter to the warm cream and stir it in thoroughly.

4) Once the pastry is baked and cooled, brush it with our cream. Spread the uncrushed biscuits that we have soaked in coffee on top of the cream.

5) Melt the chocolate and butter in a steam bath. Finally, spread this chocolate glaze on top of our dessert and smooth evenly. Leave to cool.
