What we will need:

  • 500 g sour cream
  • 1 whipping cream
  • 300 g condensed milk (Salko)
  • 1 bag – gelatine
  • 150 ml water
  • long biscuits
  • coffee – for soaking the biscuits

For the icing:

  • 200 ml whipping cream
  • 160 g chocolate

How we will proceed:

1. Whip the whipping cream into a whipped cream. Whip the sour cream with the condensed milk and whipping cream. Do not wash the bowl that the condensed milk was in, pour the coffee into it first.

2. Let the gelatine swell in a little water and then heat it on the flame until it dissolves.

3. Pour 1 cup of instant coffee into a bowl with condensed milk and sweeten with condensed milk.

4. Prepare a baking tin.

5. Lightly dip the biscuits in the coffee mixture and place the soaked side on the bottom of the tin. Stir the melted gelatine into the cream and layer some of it on top of the biscuits. Then add the soaked biscuits and the rest of the cream.

What we will need:

  • 6 eggs
  • 100 ml whipping cream
  • 2 tbsp oil
  • 1 pk red pepper
  • 1 pk yellow pepper
  • 1 pc spring onion (bunch)
  • 100 g ham
  • 50 g hard cheese
  • salt, ground black pepper to taste

How we will proceed:

1. Clean the peppers and cut into small cubes. Cut the spring onions and their sprigs into thin slices.

2. Grate the cheese on a coarse grater and cut the ham into cubes.

3. Preheat the oven to 200 °C.

4. Heat the oil in a frying pan and add the chopped vegetables and ham. Season with salt and pepper and roast until the vegetables are slightly softened, about 6 minutes.

5. Spoon the roasted vegetables and ham into a greased and floured muffin tin or paper cups or silicone moulds, about halfway through.

6. In a bowl, whisk the eggs and cream together and season lightly with salt and pepper. Pour the eggs over the vegetables, but leave room for the cheese.

7. Sprinkle the surface of the muffins with cheese and put them in the oven for about 20 minutes, until they are nicely brown and golden. Done!

3. Turn the oven to 180 °C (160 °C).

6. Pour the cottage cheese mixture into the cake pan with the batter and top with the plums, cut side up.

7. Cut the cold butter into cubes, sprinkle in the flour, sugar and cinnamon and work into a crumbly crumble with your hands. Sprinkle this generously over the plums on top of the cake.

8. Place the pie in the ovenand bake for 60 – 70 minutes until golden brown. Or you can tell when the curd in the filling starts to rise all the way up from the edges.Once the centre starts to rise, the pie is done.

What we will need:

for the filling:

  • 1 liter of milk
  • 8 eggs
  • 300 g of granulated sugar
  • 100 g of plain flour
  • 1 vanilla pod (can be replaced by 1 teaspoon vanilla extract)
  • 25 g gelatine powder

For the whipped cream layer:

  • 400 ml whipping cream (33%)
  • 2 tablespoons icing sugar
  • 1 packet whipping cream thickener

For the topping:

  • ½ teaspoon instant coffee
  • 5 tablespoons milk
  • 200 g granulated sugar
  • 70 g butter
  • 1 packet of puff pastry

Baking tray 36 x 24 cm

How we will proceed:

1. Divide the thawed puff pastry in half and roll out into two thin sheets.

2. Then pierce the sheets with a fork and bake until golden brown in a preheated oven (at 180 degrees for about 15 minutes).

3. Next, prepare the cream. Beat the egg yolks with half of the sugar until foamy. Gradually add the flour, vanilla and 150 ml of milk. Whisk to a smooth mass.

4. Whip the egg whites and the remaining sugar into a stiff snow.

5. Transfer 700 ml of milk to a saucepan and put on the heat. When the milk is hot gradually stir in the egg yolk mixture and cook, stirring constantly, until a thick custard forms.

6. Pour the gelatine into the remaining milk, allow to swell and then dissolve by heating over a flame (according to the instructions on the packet).

7. Then let the gelatine cool for a while and then carefully stir it into the snow. The snow is then stirred into the still hot egg yolk custard and whipped into a fluffy cream.

8. Finally, we start to prepare the icing. Heat the milk and dissolve the coffee in it. Add the sugar and cook, stirring constantly, for approximately 9 minutes. Turn off the heat and stir the butter into the hot mixture and mix thoroughly. You should get a smooth caramel-like mass.

9. Spread the caramel on one baked slice of dough and cut it into cubes.

10. Layer the still warm cream over the whole sheet of pastry, smooth and leave to cool.

11. Whip the cream, sugar and thickening agent into a stiff whipped cream and layer it on top of the cooled cream. Finally, cover the cream evenly with the puff pastry squares and topping.

12. Place in the fridge to set and serve.

What we will need:

Baking tray 24 × 24 cm

For the base:

  • 0.5 cup wheat flour
  • 0.5 cup sugar
  • 4 eggs
  • 3 tablespoons cocoa

For the cream:

  • 1 cube butter/margarine (200/250 g)
  • 0.5 cup milk
  • 2 cups milk powder
  • 0.5 cup sugar

For the cream:

  • 250 g mascarpone
  • 100 g dark chocolate
  • 150 ml 30% cream

Mould 24 x 24 cm

How we will proceed:

1. Mix the egg whites with a pinch of salt. Gradually add the sugar and beat until stiff.

2. Add the egg yolks and mix briefly until combined.

3. Add the flour and cocoa to the mixture. Mix everything thoroughly with a wooden spoon. Be careful not to leave any dry powder on the bottom.

4. Pour the sponge cake into a baking tin lined with baking paper and place in a preheated oven at 180 °C for about 15 minutes.

5. Boil the milk and sugar in a saucepan and then leave to cool;

6. Beat the butter with a mixer. Gradually add the cooled milk, whisking constantly;

7. Add the milk powder 1 tablespoon at a time, stirring continuously. The mixture should be smooth and homogeneous.

8. Put the crushed chocolate in a saucepan, add the cream and heat over low heat until combined. Remove and allow to cool;

9. Meanwhile, brush the cooled sponge cake with light milk cream.

10. Briefly whisk in the mascarpone cheese and then add the chocolate mixture a tablespoon at a time, stirring constantly. You should get a smooth chocolate cream;

11. Spread the chocolate cream over the top of the cake and refrigerate – preferably overnight.

What we will need:

Dough:

  • 3 eggs
  • 1/4 tsp salt
  • 130 g icing sugar
  • 1 packet vanilla sugar
  • 200 ml milk
  • 150 ml oil
  • 250 g semi-coarse flour
  • 1 packet baking powder
  • 2 tbsp cocoa powder
  • butter to grease and flour to dust the baking tray

Cottage cheese filling:

  • 750 g soft cottage cheese
  • 250 g butter
  • 1 packet vanilla sugar
  • 6 tbsp icing sugar

Orange gelatin:

  • 1 litre water
  • 120 g granulated sugar
  • 4 packets orange fizz
  • 2 pcs Golden cob

How we will proceed:

1. Preheat the oven to 180 °C and grease a baking tray with butter and dust it with flour.

2. Divide the eggs into egg whites and egg yolks. Beat the egg whites with the salt until stiff. Beat the egg yolks with the icing sugar and vanilla sugar. Add the milk and oil and mix. Next, add the flour with baking powder and cocoa. Mix well to make a smooth dough. Finally, lightly fold in the egg white snow. Pour the prepared dough onto a baking tray and bake in a preheated oven. Let the baked dough cool.

3. In a bowl, beat the softened butter with the vanilla and icing sugar. Then add the cottage cheese and mix well. Spread the filling over the cooled dough.

4. Orange gelatine. Let it dissolve and bring to the boil. Once boiling, add the golden cobs dissolved in 500 ml of water. Cook, stirring constantly, until thickened. Remove from the heat and allow to cool slightly. Spread the cooled gelatine over the cheesecake filling and set the finished cake in a cool place.
