Recipe for pork slice in cream with peas:

What we will need:

  • 600 g pork roast
  • salt, spices (strong mixture, I used witch hazel)
  • plain flour
  • 1 onion
  • 1,5 tablespoons lard
  • 125 ml cream
  • 150 g frozen peas

How we will proceed:

1. Cut the meat into slices, cut the edges, season with salt and pepper, and pat dry. Heat the lard in a frying pan.

2. Coat the slices of meat in flour, place in the pan and fry on both sides. Put the diced onion into the remaining fat and fry it as well.

3. Then put the meat and onions in a pot /I used a saucepan/, slightly cover with boiling water or broth, add more spices, a little salt and simmer. I let it “sizzle” for 25 minutes, then turned it off and let it finish.

4. Then carefully remove the meat and add the cream to the sauce. If the gravy is too thin, whisk some plain flour in the cream first. Finally, add the peas (already thawed), but just let them come to the boil. Season.

5. Serve with bread dumplings. I will choose rice next time, although they didn’t protest at home and liked it with dumplings.

Layered linzer cake with marmalade

What we will need:

  • 180 g butter
  • 1 egg
  • 130 g sugar
  • packet of vanilla sugar
  • 320 g flour / smooth
  • pinch of salt
  • 1 teaspoon baking powder
  • 350 g jam. (You can use any fruit you like. Currant jam is used in the recipe.)

How we will proceed:

1. Mix the softened butter with the salt, throw it into a blender and let it blend for a minute. Add the icing sugar, vanilla sugar and continue mixing. Set the mixer to the highest speed and mix until the dough is fluffy/3 minutes.

2. Add the eggs to the mixture and continue mixing for about three minutes. Gradually add the flour to which you have added the baking powder. Mix the dough first in the mixer, then with a spatula and finally knead with your hands.

3. It must be smooth, soft and easy to divide.

4. Place the dough on baking paper and roll it out into a rectangular shape about 5 mm thick using a rolling pin. It should come out a full mould measuring 30 x 35 cm. Prick the dough sheet with a fork.

5. Then bake at 200 degrees for 10-12 minutes until the edges are brown. Leave to cool. Cut the edges off with a sharp knife and cut the sheet in half to make two rectangles.

6. Place the dough left over after you have aligned the edges into a bag and crumble.

7. Transfer the first rectangle of dough to the baking sheet.

8. Spread half of the jam over it, leaving the edges loose.

9. Place the second rectangle on top of the jam, spread with the remaining jam and cover the edges as well. Sprinkle with the crumble obtained from the cut-off pastry.

10. Let the cake rest at room temperature for 2-3 hours. Cut into cubes and serve.

Turkey breast with mushroom-cheese sauce and gnocchi:

What we will need:

  • gnocchi
  • 400 g turkey breast
  • barbecue seasoning with herbs
  • salt, pepper
  • potato starch
  • sunflower oil

Sauce:

  • 200 g mushrooms
  • 2,5 tablespoons butter
  • spring onions
  • pepper, crushed cumin
  • seasoning (for grilled cheese)
  • 1 rectangle of Apetito cheese
  • 250 ml cooking cream
  • 1 teaspoon full-fat mustard

How we will proceed:

1) Cut the turkey meat into pieces, add spices (to taste), salt, pepper, sunflower oil, potato starch and mix well. Place in the fridge and let rest (up to a day).

2) Heat a frying pan and fry the meat on it, separating the pieces as they tend to stick together. Roast.

3) Melt the butter in a smaller saucepan, fry the sliced mushrooms in it, then add the sliced spring onions, ground pepper, crushed cumin, spices to taste (don’t be afraid to experiment), be careful with the salt … sprinkle in a small spoonful of flour … after a while pour in the hot water and leave to boil gently.

4) After ten minutes, add the Apetito cheese and allow to melt. Finally, pour in the cooking cream mixed with full fat mustard. Season.

I don’t cook the gnocchi … I put them in a hot pan with a little oil and add a little salt towards the end of browning. We wish you a good taste.

What we will need:

  • 500 g cocoa biscuits
  • 500 g cream cheese (mascarpone)
  • 300 ml full-fat cream
  • 200 g chocolate
  • 150 g sugar
  • 100 ml milk
  • 50 g grated coconut
  • 10 g vanilla sugar

How we will proceed:

1. Place the cream cheese in a deep bowl, add the sugar and vanilla sugar. Using an electric beater, start beating the mixture at low speed to incorporate the sugar into the cream cheese. Then increase the speed and continue beating until the mixture is creamy smooth.

2. Now add the full-fat cream to the mixture and continue beating until the ingredients form a homogeneous mixture.

3. Then add the grated coconut to the bowl and mix thoroughly with a spatula.
Prepare a square cake tin with removable sides and arrange the cocoa biscuits side by side in the bottom of the tin. Then pour half of the cream over the biscuits and spread it evenly over the biscuits.

4. Once you have finished, place a second layer of cocoa biscuits on top of the cream and spread the other half of the cream on top of the biscuits again.

5. Place the prepared cake in the refrigerator for 30 minutes.

6. In the meantime, break the dark chocolate into a deep bowl, pour the milk over it and then place it in the microwave where it will heat for about 5 minutes until it melts.

7. Stir the two ingredients until they are smooth.

8. When the cake is sufficiently cooled, remove it from the fridge and pour the chocolate frosting over the entire surface of the cake. Then place the cake back in the refrigerator for another 30 minutes to allow all the layers to set and the cookies to be moist enough.

Grandma’s chicken from one sheet:

What we will need:

  • 1 whole chicken (cut into smaller parts)
  • 150 g smoked bacon
  • 2 tablespoons lard
  • 1 onion
  • 3 rolls
  • 1 dl milk
  • 5-6 pcs of potatoes
  • 1 teaspoon marjoram
  • 1 teaspoon of spice Potato pancakes
  • 3 cloves of garlic
  • 1 teaspoon cumin
  • 1 teaspoon ground pepper
  • 4 eggs
  • 1 tsp vegeta
  • 1 teaspoon salt

How we will proceed:

1) Melt the lard in a frying pan and add the diced smoked bacon, stir and fry the onion in it.

2) In a bowl, drizzle the sliced buns with milk. Mix the moistened buns with the two eggs, add the veggies and stir in the fried bacon and onions.

3) Grate the raw potatoes. Then mix them with the marjoram, garlic, a little salt, a pinch of cumin, pepper, potato seasoning and two eggs. This makes a potato dough (without flour).

4) Then mix the potato chip mixture and the bun mixture together. Grease a baking dish with lard and pour the mixed mixture on it. Divide the chicken into smaller pieces and season with salt and pepper (I use the Potato Spice again). Put it into the mixture on the baking tray, skin side down, pressing it a little (you will get the chicken to form a sort of “nest”). Cover and bake in a well heated oven at 170 degrees for about an hour and a quarter. When the meat is almost tender, increase the oven temperature to 180 degrees, turn the chicken pieces skin side up, bake for another 15 minutes.

5) Then remove the lid of the baking dish and bake until crispy. If you have an oven program that alternates between hot air and grill, just five minutes and the skin is cooked.

Apple pie with cinnamon:

What we will need:

  • 3-4 apples
  • cinnamon sugar

For the dough:

  • 300 g semi-coarse flour
  • 120 g sugar
  • 250 ml milk
  • 100 ml oil
  • 1 egg
  • 1/2 baking powder or 1 teaspoon baking soda

For the cream:

  • 300 ml milk
  • vanilla pudding
  • 150 g butter
  • icing sugar and rum to taste
  • decorating: tatranka (in the original MARGOT – but I don’t have it)

How we will proceed:

1. Put a layer of grated apples in a pie pan (I greased the pan with butter). Sprinkle the apples with cinnamon sugar.

2. Whisk together the icing sugar, eggs and oil, then stir in the milk, add the flour and baking soda.

3. Pour the batter over the apples. Bake at 170°C for about 30 minutes. Cook the custard and while still hot add about 1,5 tablespoon of icing sugar and the softened butter cut into pieces. Whisk everything immediately, add rum to taste (don’t save it again)

4. Turn the cake over so that the apples are on top. Put back into the cake tin and pour the still warm cream over the apples. Put in the fridge to cool.

5. Then grate the MARGOT chocolate.

Cake with apples and mascarpone:

What we will need:

Baking tray 24 × 24 cm

  • 1 large packet of biscuits
  • 1 kg apples
  • 2 orange jellies
  • 250 g mascarpone
  • 200 g chocolate (my favourite)
  • 330 ml 30% cream
  • 2,5 teaspoons gelatine (optional)

How we will proceed:

1. Peel the apples, cut into smaller pieces and fry in a pan with a little water. Add the 2 jellies to the cooking apples and mix thoroughly. Remove and let cool.

2. Crumble the chocolate and melt in a saucepan over a low heat – be careful not to burn. Remove and allow to cool.

3. Line the bottom of a baking tray with baking paper and stack the biscuits on top.

4. Spread the apple mixture over the biscuits.

5. Briefly whisk in the mascarpone, then add the cooled melted chocolate and stir. Spoon the cream over the apples. (Alternatively, you can place the biscuits on top of the apple mixture and then the chocolate cream). Place the dough in the refrigerator,

6. Whip the cream until stiff, then you can add the cooled gelatine (dissolved in 100 ml boiling water) to make a stiff dough.

7. Remove the cake from the fridge, brush with chocolate cream and put back in the fridge – preferably overnight.

Potato pancakes stuffed with cheese

What we will need:

potato dough:

  • 1 kg potatoes
  • 1 onion
  • 3 pcs garlic
  • 3 tbsp plain flour
  • 2 pcs eggs
  • to taste salt, ground black pepper, ground paprika, marjoram
  • a little oil or lard for spreading

cheese filling:

  • 200 g cheese in a casing
  • 100 g smoked cheese
  • a little milk

How we will proceed:

1. Grate the potatoes on a coarse grater.

2. Mash the grated potatoes lightly in your hands to get rid of excess water and place them in a larger bowl.

3. Grate the onion, mash the garlic and add the flour and whole eggs to the potatoes.

4. Then add salt and spices and bake a test pancake in the hot fat, seasoning the dough if necessary.

5. Make a spreadable cheese filling with the spreadable cheese, grated smoked cheese and a little milk (1 to 2 tbsp).

6. Then bake the stuffed pancakes in a frying pan by shaping the pancake with a spoon in the hot fat. While it is frying, spread a little cheese filling on the bottom and then layer the potato dough on top again. Carefully turn the pancake over and fry the other side.

What we will need:

  • 1 bag of biscuits
  • 2 curds
  • 1 whipping cream
  • gelatine
  • 1 bag of vanilla sugar
  • juice of one lemon
  • any fruit

How we will proceed:

1. Start by mixing the cottage cheese, whipping cream, vanilla sugar, lemon juice and gelatin. Mix thoroughly and add the chopped fruit. Mix again.

2. Prepare the cake tin. Place a layer of sponge cakes on the bottom and drizzle with the fruit juice. Spread some of the curd mixture on top of the biscuits. Followed by the biscuits again and again a layer of curd.

3. The cake can then be decorated with chocolate and tubes, just as in the picture.

4. Finally, place our cake ideally in the fridge overnight.

  • 80 g sugar
  • 150 g mascarpone

Chocolate-cheesecake without baking

What we will need:

  • 4 eggs
  • 300 grams of soft cottage cheese
  • 100 grams of dark chocolate

How we will proceed:

1. First, melt the dark chocolate in a water bath and let it cool. Meanwhile, separate the egg yolks from the whites and whip the stiff snow. Mix the egg yolks back with the soft curd. Gradually add the melted chocolate and egg white snow to the yolk and curd mixture, using a whisk and gentle hand strokes to achieve a fluffy consistency.

2. When the batter is ready, pour it into a cake tin lined with baking paper. Place the tin in a large baking tray half filled with cold water. Place in a preheated oven for 50 to 55 minutes and bake at 180 degrees.

3. When the baking time is nearing the end, leave the cake in the oven for another ten minutes. Then remove the cake, wait for it to cool and decorate it with either chocolate icing or, for example, coconut and nuts.
